Fresh, delicate and drinkable rosé wine, vinified only in steel with a very short cryomaceration. It smells of wild flowers, citrus peel, roses and small red fruits. On the palate it is subtle, light, pleasant, fresh, savory and fruity.
The Roman dolium (pl. dolia) was a large container, usually made of terracotta, used to transport and store wine and oil.
Rosé is a wine for the whole meal, except for desserts. We can combine it with dishes from caprese to fish first courses, but also with white meats, medium-aged cheeses or shellfish.
